- 1 can 1.36 L Classic Tomato
- 6 cups 1.5 L water
- 3 tbsp 45 mL basil pesto
- ½ cup 120 mL Sour cream
- ¼ cup 60 mL Basil pesto
- Pour soup and water into a large pot and heat over medium high heat.
- Stir in Basil Pesto and bring to a simmer. Simmer for 10 minutes.
CCP: Heat to a minimum internal temperature of 74°C for 1 minute.
CCP: Hold for hot service at 60°C or higher until needed. - For garnish mix sour cream and remaining basil pesto in a bowl until combined.
- Portion 250 mL soup into a serving bowl. Top each bowl with a dollop of the sour cream mix. Serve immediately.
