Spicy, colourful flavours of this Caribbean dish meld well with a sweet, cooling watermelon salsa made with pineapple, Salsa, lime and cilantro.

|Lime juice, fresh||80 mL||1/3 cup|
|Jerk seasoning rub||15 mL||1 tbsp|
|Lime zest, fresh||10 mL||2 tsp|
|Canola oil||45 mL||3 tbsp|
|Watermelon, seedless, diced||500 mL||2 cups|
|Pineapple, fresh, diced||500 mL||2 cups|
|Cilantro, fresh, chopped||125 mL||1/2 cup|
|1. In a bowl mix together salsa, lime juice, jerk seasoning and lime zest. Whisk in oil. Cover. CCP: Refrigerate below 4°C/40°F. at least 2 hours before using.
2. In a large bowl, gently toss together watermelon, pineapple and cilantro; fold in jerk salsa and gently toss to mix completely. CCP: Refrigerate below
4°C/40°F. at least 2 hours before serving.
